Thiers-Issard Four-Star Elephant Sabatier knives in stainless steel all feature the same high quality and attention to detail as their carbon steel counterparts - indeed, due to the enduring brightness qualities of stainless steel there are a number of knives and accessories on this page that are not made in carbon steel form. Amongst these are bread knives, steak knives, tomato knives and table accessories that, due to being ‘table ware’ as opposed to kitchen knives, have a better appearance in stainless steel. Also, knives with scalloped or microtooth edges are impractical for the owner to re-sharpen, as would be necessary if they were made in carbon steel. The one exception is the ‘Santoku’ knife, where the blade scalloping is set back from the edge (see below). Don’t forget, though - all knives and accessories sold singly, of either carbon or stainless steel, can be mix’n’matched to take advantage of our quantity discounts!

Seen here with Red Stamina handle, this classic French design lends itself to many cooking tasks - slicing, dicing and chopping - and is beautifully balanced for the hand.

Boning knife - traditionally used, as its name suggests, for removing the bone from joints etc. prior to roasting. Its narrow point is perfectly designed to gain purchase in the smallest nooks and crannies!

Something quite new from Thiers-Issard and a great addition to their knife range is this ‘Santoku knife, modelled on a traditional Japanese design. It has all the versatility of the Cook’s knife combined with the extra ‘clearing’ ability of a scalloped-edge knife (see inset left).
