Our Santoku has a granton style edge featuring semi – circular scallops ground into the edge of the blade which extend from the middle and alternate on either side. These curved edges help to reduce food sticking to the blade by allowing air between it and the food. They also allow food juices to run clear and reduce friction on the blade when slicing.
