The Sabatier Santoku knife is the Japanese version of the chef’s knife and so is a versatile knife which can be used for everything from slicing fruit and vegetables to slicing meat. The wide blade also helps to clear food from chopping boards.
Our Santoku knives have a granton style edge featuring semi – circular scallops ground into the edge of the blade which extend from the middle and alternate on either side. These curved edges help to reduce food sticking to the blade by allowing air between it and the food. They also allow food juices to run clear and reduce friction on the blade when slicing.
