Treated with care your Thiers Issard Sabatier knives should give many years of service.

Try to keep your Thiers Issard Sabatier knife in a lined drawer, on its own if possible, or on a magnetic knife strip or in a knife block. In this case ensure that the knife is clean before replacing it in the block, otherwise bacteria can build up in the slot. Blocks that have vertical slots can dull the blade as you pull it out. Turning the knife so that it sits on the spine in the slot can help to avoid this problem.

Your Thiers Issard Sabatier knife is designed to cut and slice meat, fruit and vegetables. Using it for any other purpose will damage it, possibly irretrievably, and will also invalidate your guarantee. Amongst other things DO NOT use your knife as a screwdriver or can opener or use it on frozen food.

PLEASE DO NOT put your Thiers Issard Sabatier knife in the dishwasher to clean it. The hot temperatures and caustic chemicals commonly found in dishwasher powders will damage the blade, rivets and handles.

If you have a Thiers Issard Sabatier knife with a carbon steel blade please make sure you dry it thoroughly before you put it away. If not, the blade will rust. It may be possible to remove any rust that does form with some fine wire wool, but care must be taken to avoid injury. In particular, ensure the edge is not exposed by placing the edge on a tea towel for example. Please note that knives with carbon blades will quickly darken and patinate with use. This is normal and in fact helps to protect the steel.

Although all our knives carry a guarantee, they are not indestructible. Specifically, they may snap or break if dropped, especially carbon knives as the carbon steel can be brittle.

All Thiers Issard Sabatier knives come with a lifetime guarantee against defects in manufacture. If you have problems with your Thiers Issard Sabatier ****Elephant brand knife then please contact us at [email protected] and we will be pleased to assist you.

Please note that the guarantee does not extend to any damage caused by (a) cleaning in a dishwasher (b) use to cut frozen foods (c) being hit with any hammer or other object (d) use as a screwdriver or lever (e) use as a cleaver (except where specifically sold as such). Sabatier Knives UK will also not recognise any claim for damage to a knife due to it being dropped or thrown.

Regrettably we are unable to help with defects/damage to any knives bearing the Sabatier name that don’t also have the **** Elephant logo. In the first instance we would suggest if you have any complaints that you contact the company you purchased the knife from. Pricing, Delivery & Returns

SUMMER CLOSURE

Please note that we will be closed from Wednesday 7th August to Wednesday 14th August inclusive. All orders received will be processed and shipped as soon as we are able once we re-open.

Pricing, Delivery & Returns Policy

We seek to deliver orders in a secure manner and as promptly as we can. We do not usually ship on a Wednesday but otherwise we ship every working day. Orders received before midday (UK time) on a working day will usually be despatched the same day.

In the event that an item is out of stock or there is some other reason why there might be a delay, we will notify you by email of this.

Orders received over the weekend will be usually be despatched on the next working day.

We will not process or despatch orders on weekends, UK bank holidays or other annual or occasional holidays which we will notify through the website.

Prices and Delivery – UK

Please ensure that you have selected “United Kingdom” at the top of the page. You will then see the prices applicable to the UK and which include VAT.

It is now a legal requirement that all knives purchased through this or any other website are shipped using an age verified service. Orders may require a signature on delivery and all knife orders may require proof of age as the parcel will only be handed to someone who the Royal Mail are satisfied is over 18. As a result we are not able to comply with any request that the parcel be left in a safe place.

All UK orders are sent through the Royal Mail using either Tracked 48 Age Verified service at £6.95 with a delivery aim of two to three working days or Tracked 24 Age Verified at £9.50 with a delivery aim of the next working day (not guaranteed).

Delivery times are based on Royal Mail service definitions and in particular may vary due to coronavirus, at peak times such as Christmas and during bad weather or industrial action. We guarantee to process and despatch orders as quickly as we can. All orders to other European will be subject to a delivery charge of £11.99.

If you specifically require a quicker service please contact us and we will do what we can to help.

Delayed Or Lost Deliveries

Although your order should arrive within the timescales stated above, there can be delays in the Royal Mail network, especially at busy times such as Christmas, during times of adverse weather conditions or strikes.

Please allow at least the time periods stated above before querying a delivery, particularly in the case of international deliveries, where extra delays can be caused by customs procedures in addition to those reasons mentioned above.

A lost parcel is a rare occurrence and typically an order that has not arrived in the time frames stated above usually arrives a few days later. If an order appears to be delayed please contact your local sorting office in the first instance to see if Royal Mail (or your local postal network provider) has attempted delivery and has not left a calling card.

Returns

We very much hope you will be pleased with your purchase from the Sabatier Knives UK. However, if for any reason you wish to return goods, we are happy for you to do so, on the basis outlined below.

The first step is to notify us by email at [email protected] You should please do this as soon as possible but in any event you must notify us within 14 days of receiving the goods. We will advise you how to return the goods to us. Returning the goods to us will be at your cost and risk. Provided the goods are returned in the same condition they were received, in their original packaging and are unused, we will be happy to refund the purchase price. For UK and EU deliveries we will also refund any delivery cost you paid to us as part of the original order (but not any extra paid for an enhanced delivery service).

Please note that we cannot accept returns of goods which are “special orders” (i.e. the goods have been made specifically to the customer’s requirements).

For deliveries outside the EU we reserve the right to charge a restocking charge of 10% of the amount paid due the charges and administration we will incur.

Please ensure that the delivery address in your PayPal account is correct. Where a customer has supplied us with an incorrect address we will not be able to make any refund until the goods have been returned to us and will then have to charge for re-posting.

Faulty Goods

In the unlikely event that the goods you receive are defective, then please email us at [email protected] You should please do this as soon as possible but for any defect which is evident from inspecting the goods you must notify us within 14 days of receiving the goods. We will advise you how to return the goods to us. The goods should be returned with all original packaging. Returning the goods to us will be at your cost and risk.

We will inspect the goods upon their return. If we agree that the goods are defective then we will be happy to refund the amount paid together with any reasonable postage costs incurred.

General Terms & Conditions

1. General

Sabatier Knives UK is a trading name of The Invisible Edge Ltd., a company incorporated in England & Wales, reg. no. 07903928, registered office address 7 Tannery Court, Charlton Marshall, Blandford Forum, DT11 9NF.

These terms and conditions govern the use of this website and every purchase of goods by any person (“you”/“customer”) from The Invisible Edge Limited (“us”/“we”/“our”). Please note that by placing an order with us you agree to be bound by these terms and conditions. We reserve the right to revise and amend these terms and conditions at any time (in respect of any subsequent orders). Nothing herein shall operate to exclude or limit any of your statutory rights.

As it is illegal to purchase knives in the UK when under the age of 18, by placing an order with us you are confirming you are at least 18 years of age.

2. Product Descriptions And Use

The application and use of the goods is the absolute responsibility of the customer. Any advice and information provided by us, whether verbally, or in writing, is given in good faith but without liability on our part.

Due to browser software limitations and screen resolutions the colours of goods may vary slightly from those shown in the photographs on the website. Furthermore, the images are for illustration purposes only and, unless otherwise stated, are not images of the specific item offered for sale. Whilst we make every effort to ensure these images are as accurate as possible we shall not be liable for any differences between these images and the actual product. Furthermore, the colouring and figuring of natural products can vary significantly. If you have specific requirements as to colour, marking or otherwise please contact us before purchase.

Whilst we make every effort to give accurate information and technical specifications of products, these are given for guidance only and in good faith but no responsibility is accepted for any errors or omissions on our part.

3. Pricing & Availability

All orders are subject to acceptance and are accepted subject to stock availability. As we process your order we will email you if that product is out of stock. We may offer you the opportunity to purchase an item of at least equivalent specification and value to the one you have ordered. Alternatively you may be offered the opportunity of waiting until the item is in stock again. In this case we will do our best to give accurate restocking times but these cannot be guaranteed. If we are out of stock and you do not wish to wait or accept an alternative product then you will be entitled to cancel the order and will receive a full refund. If we contact you about stock availability and do not receive a response within a reasonable period of time we will cancel the order and refund you.

Prices are liable to change at any time but any such change will not affect orders in respect of which we have already sent a confirmation email.

We reserve the right to cancel an order and refund if we have made a genuine error in pricing.

Prices applicable to the UK include VAT. In all other cases prices do not include VAT or any other local taxes, duties or charges that may be applicable. Where we ship to any country outside of the UK the customer is the importer to that country and it is the sole responsibility of the customer to determine and meet any applicable charges.

4. Delivery

Dates for delivery are given in good faith and as accurately as possible, but are not guaranteed. Time shall not be of the essence for any order. We shall not be liable for any delay in delivery caused by any shortage of supplies, lack of communication from the customer, delay caused or contributed to by any postal or courier engaged to deliver products or by any other cause or thing outside our control including, but not limited to, any labour dispute, civil commotion, natural catastrophe, or any action or restriction imposed by any regulatory or enforcement authority.

Where it is agreed that a customer may pay for goods by instalments, the customer shall not be entitled to cancel the order, to refuse to accept the goods (unless defective) or to pay the balance of any instalments.

Where we are unable to fulfil an order within a reasonable period of time due to our inability to secure appropriate goods from a supplier, we reserve the right to cancel the order. Our liability in such circumstances shall be limited to repayment of any deposit or payments made by the customer.

Customers right to cancel any order or to return any goods shall be governed by our Delivery and Returns Policy in place at the time of ordering and the policy forms part of these terms and conditions. Goods cannot be returned except in accordance with such policy.

All goods returned to us must be securely and properly packaged, labelled correctly and returned to us with any postage charges paid, including if appropriate any insurance charges. We will not accept any goods where the postage has not been paid or insufficiently paid. The goods are at customer’s risk until in our possession. We shall not be liable for any damage to goods caused in transit.

5. Payment

Unless otherwise agreed in writing, goods will not be despatched until payment has been made in full and in accordance with such payment methods as shall be in use by us from time to time.

6. Property In Goods

Property in and title to goods will not pass to the customer until we have been paid in full, but risk in goods shall pass to the customer at the time of delivery.

7. Damage To Goods

Claims for damage to goods or for any partial loss of goods or shortage must be notified immediately on receipt by email to us and the carrier if appropriate, and in any event within 14 days of receiving the goods. Failing this we shall not be liable in respect of any such claim and the goods will be deemed to have been delivered in full. In any event, our liability in respect of claims for damage to or loss of goods in transit shall not extend beyond an obligation either to repair or replace any such goods or to pay the invoice price of the goods.

8. Our Liability

We warrant that all goods supplied by us will be of satisfactory quality at time of delivery. Our liability in respect of any product purchased from us is limited to the purchase price of that item. This does not, however, limit our liability where death or injury is caused by our negligence, our liability under section 2(3) of the Consumer Protection Act 1987, our liability for any loss caused by fraud or other matter where it would be illegal for us to exclude, or attempt to exclude our liability.

We shall not be liable for any loss of income or revenue, loss of business, loss of profits or contracts, loss of anticipated savings or for any indirect or consequential loss or damage howsoever caused, whether by tort, breach of contract or otherwise even if foreseeable.

Welcome to Sabatier Knives UK. We are a specialist kitchen knife retailer offering a range of high quality Sabatier knives made in Thiers, France by Thiers Issard under the Sabatier **** Elephant brand.

Whilst there are numerous knife manufacturers using the Sabatier brand, only those manufactured in Thiers using traditional methods by skilled craftsmen can truly be described as genuine Sabatier. In 1884, Pierre Thiers, a master cutler and razor maker, founded Thiers Issard. Around the same time he also purchased the **** SABATIER trademark from Gabriel Sabatier, who had registered it in 1860. The company started making the high quality knives that are still being made in the same way today.

We stock various types of knives from general purpose cooks’ knives to the more specialist boning knives used for removing meat from bones or cutting fish and poultry, all in varying sizes and prices. For those who are looking for a high quality knife at a reasonable price we have our Ideal range. Whilst these knives are not hand sharpened in the way of the knives in our Traditional Forged Ranges they are still made with the care and precision expected of Thiers Issard Sabatier. We stock them in stainless steel with black plastic handles. For the professional cook we stock our Traditional Forged knives with a highly practical black nylon handle in both carbon and stainless steel. For customers looking for a very high quality knife which is also a thing of beauty, we also stock Traditional Forged knives bearing the unusual red stamina wooden and white micarta handles.

About Sabatier Knives

Our Traditional Forged Sabatier knives have blades manufactured using an intricate, multi-step process by skilled craftsmen. A piece of solid steel alloy is heated to a high temperature and pounded while hot to form the parts of the knife (the blade, bolster, and tang) in one operation. This means the knife has the perfect balance and alignment that many professionals value so highly. The blade is then heated above its critical temperature, this varies depending on the alloy used, cooled rapidly and then tempered to the desired hardness. Finally the handle material of choice is securely affixed using rivets for a lifetime’s use. Finally the blade is polished and sharpened by hand.

Please note that not all Sabatier are the same. There are other manufacturers using the name Sabatier but some of these knives are mass produced and not of the same quality as the Thiers Issard knives we sell.

Choosing A Sabatier Knife

Which Sabatier Knife Should I Choose?

Our knives are manufactured either from carbon or stainless steel. There are advantages and disadvantages to both which we have summarised below. When choosing the blade material you will need to consider how often you will use the knife, what you are going to use it for and how conscientious you are about caring for your knife.

If you are seeking a knife which is made from one piece of forged steel then these may be found in our Traditional Forged range. The Ideal range are constructed differently with an aluminium bolster, resulting in a lighter, less expensive, knife.

Carbon Steel Knives

Sabatier carbon steel knives from Thiers Issard are known for their razor like edge and mottled patina. While they require more care than stainless steel knives, they are often the professional’s choice for a precision cut and an edge that stays true with some basic maintenance.

Thiers-Issard, whose handcrafted knives have been forged in Thiers for over a hundred and fifty years, is one of the few remaining companies that still make pure carbon steel knives. These knives, forged out of a single core of steel provide the perfect balance and alignment that many professionals value so highly.

Please note that carbon steel knives quickly acquire a patina and an aged look. If you are looking for a knife which stays bright and shiny then your choice should be a stainless steel knife.

Carbon steel knives have a greater vulnerability to corrosion and staining. Please be aware that the blades should be cleaned and dried immediately after every use – do not leave them to drain – and the blade covered with a light mineral oil to keep it from rusting.

Our Thiers Issard Sabatier knives should not be placed in a dishwasher – the combination of high temperatures and caustic chemicals will damage the blade and the rivets (in addition to damaging wooden handles).

Stainless Steel Knives

Stainless steel Sabatier knives from Thiers Issard have an enduring bright and shiny finish and an edge which is tremendously durable.

Whilst these knives are more resistant to marking or staining than carbon steel knives and require less maintenance, they should still be cleaned and dried promptly after use to avoid any rust spots from appearing.

Our Thiers Issard Sabatier knives should not be placed in a dishwasher – the combination of high temperatures and caustic chemicals will damage the blade and the rivets (in addition to damaging wooden handles).

Choosing a Sabatier Knife

Choice of Knife Handle

We stock our knives with four types of handle material.

When choosing the type of handle material for your knife you will again need to consider how often you intend to use the knife. Our Ideal range has black plastic handles which are particularly hard wearing and are suitable for everyday use. If you want a knife from our Traditional Forged range then those with black nylon handles are a good choice if you require a hard wearing option for prolonged daily use in professional environments.

The other knives in our Traditional Forged range have more unusual handles and whilst these will require care and attention to keep them at their best, we believe it is worth the effort to have something that is unusual yet functional as well as being a beautiful addition to your kitchen. Our red stamina handles are made from a laminate of resin impregnated birch wood veneers which have been compressed under high heat and pressure, then polished to produce a beautiful grained finish. Each handle is unique having its own pattern and colour.

Our white micarta handles are made from a material which, whilst beautiful, is also extremely tough and hard wearing. It is made in a similar way to red stamina in that heat and pressure is applied to a linen soaked resin. The end result is a lightweight and strong handle which is smooth to the touch, but has an interesting patina showing the layers within the resin. This white knife handle is a beautiful and more robust alternative to our red stamina handles.
